Spicy Shrimp and Zucchini Rotini
To be honest I came up with this because I wanted a bunch of tasty food for least calories. It turned out tasting like it has twice the calories it actually has. This is a bunch of food so you may want to split this dish into two servings if you are not starving. You can replace the spicy sauce with a more tame version - just stick to a good organic sauce with low calories.

Ingredients
- 3/4 cup whole wheat rotini
- 18 large shrimp
- 1 zuchinni diced
- 1/4 red onion chopped
- 1/2 cup chopped bell pepper
- 1 cup chopped fresh mushrooms
- 1 cup Muir Glen Spicy Arrabdiata Sauce
- 1/4 cup shredded mozzarella
Instructions
- Set your oven to preheat at 350 degrees.
- Coat a skillet with cooking spray then over medium high heat sautee the zuchinni, onion, mushroom and bell pepper.
- Boil the rotini until it is done but still firm. Drain and return to the pot and add a teaspoon or so of butter to keep the pasta from sticking.
- For extra spice dust peeled shrimp with More Spice (or cayenne pepper). Once the vegetables start to soften add the shrimp and tomato sauce. Cook until the shimp are mostly cooked and then turn the heat to low.
- Put the rotini in a baking dish and cover with the shrimp and vegetable mixture. Sprinkle on the shredded mozzarella. Cook for 20 minutes.
